FAQ
What does the sundial represent?
In contrast to the bustling town centre and industrial ports of Edinburgh, our way of life in Colinton feels like stepping back into a simpler time – one closely connected to nature and suited to a slower pace. To us, the sundial is a daily reminder to spend time wisely – to savour every moment and enjoy the beauty of a slower pace of life.To us, the sundial is a daily reminder to savour every moment and enjoy the beauty of the slow life.
Why is the gin called “the wandering hours”?
The Wandering Hours is the aspiration to slow time down and resist the urge to rush. It is inspired by Colinton’s Foulis Sundial, carved in 1630, which connects the tranquillity of our dells and landscapes to a slower, wandering way of life – where time is best spent wisely.
What are terpenes, and what difference do they make?
Terpenes are the natural aromatic compounds found in flora and botanicals. They do more than just provide flavour- terpenes subtly affect the physiological and neurological experience of a spirit.
Historically, gin was distilled and infused with botanicals specifically to capture these powerful aromatics, and using our experience with such aromatic compounds, we’re honouring that tradition by using a gentle copper bain-marie still. Every botanical in our recipe is thoughtfully chosen, harmonising their natural aromatics .
